Kale and Strawberry Salad w/ Strawberry Vinaigrette

This was a recent cooking class recipe but I thought the timing was right to post in on my website. Strawberries are in season now and what a perfect time to try a new recipe with them! The dressing for the salad is AMAZING and you’ll love how easy and quick it is to put together!

Kale and Strawberry Salad w/ Strawberry Vinaigrette

Serves 4-6

For the dressing:

2 cups of whole strawberries

1 tsp. Dijon mustard

2 tbsps. agave

3 tbsp. apple cider vinegar

1/8 tsp. salt

¼ cup canola oil

1 tbsp. poppy seeds

For the salad:

1 5 oz. container of baby kale or kale mix

2 cups of quartered strawberries

1 cup of julienned jicama

1 avocado, pitted, peeled and cubed

To make dressing, place all salad dressing ingredients except poppy seeds in a blender or food processor and blend until smooth. Transfer dressing to a jar or measuring up and stir in poppy seeds. Makes 12 servings, 2 tbsp. per serving.

To make salad, arrange kale on a platter or in a bowl and top with strawberries, jicama, and avocado. Top with dressing and serve.  Calories: 218 Carbs: 19g Fat: 7g
